Macarons are Italian in origin. It was Catherine de Médicis, former Queen of France of Italian origin (1547 to 1559), who introduced them to France. At the beginning of the 20th century, the Parisian macaron was born: the pastry chef Ladurée imagined a sweeter, more fragrant macaron, enriched with jam or buttercream, and colored. This new recipe is still a worldwide hit.
